This dissertation looks at architecture in the wine industry and its challenges. By observing its evolution, we can see that it has developed at the pace of technical progress. Wine cellars are no longer simply cellars. They crystallise social, economic, educational, technical and cultural aspirations... The winemaking process is scripted and magnified through these structures, which perpetuate the ancestral traditions and make them available to the general public.
